What did the mother tomato say to the baby tomato when he couldn’t keep up ? Ketch-up 😂 Seriously though, I’ve got a lot of tomato action happening in the garden and now’s the time to make the most of their delicious goodness. Not only vibrant and sassy flavour bombs a single tomato can provide about 40% of the daily recommended minimum of vitamin C. This soup is really yummy and the addition of caramelised onion gives it a sweet balance. I did a double batch and froze some for the nights I can’t be assed cooking. It’s brilliant with a swirl of pesto in it, or fresh herbs stirred through at the last minute but I served this for my lovlies with a toasted cheese sammy, delicious x
Roasted Tomato and Caramelised Onion Soup
INGREDIENTS
•1.5 kg of tomatoes cut in half
• 1 whole bulb of garlic
• 3 Tbls olive oil
• salt and pepper
Roasting your toms is easy peasy. Just pre heat your oven to 180, pop your tomatoes on an oven tray. Trim a thin layer off the top of your garlic bulb - so you can just see the actual clove bits and place that amongst the tomatoes. Drizzle your oil all over the tomatoes and then generously season with salt and pepper.
Roast the tomatoes and the garlic in the oven for 45 minutes, or more if you forget they’re in there like I did When they’re done take them out of the oven and gently squeeze the garlic clove out onto the tray to be added into the soup too.
Caramelised Onions
• Two brown onions
• 2 Tbls of olive oil
Slice your onions thinly and place them in a pan with the oil on a med - low heat. Cook them, stirring occasionally until they are golden brown (or “Trump Brown” as I like to call it ) This will take about 20 minutes.
Now it’s as simple as mixing the tomatoes (use all the juice in the roasting pan too - yummy )and garlic with your onions using a blender or stick blender. At this stage you might like to add fresh basil, some stock if you’d like a thinner soup or coconut cream for a yummy creamy finish. If you don’t like the seeds you can strain the soup. Such a beautiful and warming bowl of goodness as our days get a little cooler x
